Description

Fluffy Lebanese Rice made with toasted vermicelli noodles, butter, and perfectly seasoned long grain rice. This comforting Middle Eastern side dish is warm, buttery, nutty, and incredibly easy to pair with grilled meats, vegetables, or hearty stews.


Ingredients

  • 1 cup long grain rice
  • 1/2 cup broken vermicelli noodles
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 2 cups water
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped parsley

Instructions

  1. Rinse the rice thoroughly under cold water until the water runs mostly clear. Drain well.
  2. Place a medium saucepan over medium heat.
  3. Add the butter and olive oil to the saucepan.
  4. Stir in the vermicelli noodles and cook until golden brown, stirring constantly.
  5. Add the drained rice and stir gently to coat with the butter and toasted vermicelli.
  6. Pour in the water, then add salt and black pepper.
  7. Bring to a gentle boil, then reduce the heat to low and cover tightly.
  8. Cook for about 18 minutes until the liquid is absorbed and the rice is tender.
  9. Turn off the heat and let the rice rest covered for 5 minutes.
  10. Fluff with a fork, garnish with chopped parsley, and serve warm.

  • Toast the vermicelli carefully because it browns quickly.
