- 1 pound Italian sausage (mild or spicy, crumbled)
- 4 medium russet potatoes, peeled and thinly sliced
- 1 jar (15 oz) Alfredo sauce
- 3 cups chicken broth
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- Salt and black pepper to taste
- 2 tablespoons fresh parsley, chopped
- 4 round bread bowls (optional)
Instructions
- Set crockpot to LOW and lightly grease the insert if needed.
- In a skillet, brown the sausage over medium heat until cooked through. Drain and set aside.
- Add sliced potatoes, onion, garlic, sausage, Alfredo sauce, and chicken broth to the crockpot. Stir gently to combine.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until potatoes are tender.
- Stir in heavy cream and cheddar cheese. Cook on LOW for another 15–20 minutes until melted and creamy.
- Season with salt and pepper to taste.
- Ladle into bowls or bread bowls. Garnish with parsley and extra cheese if desired.
Notes
- For a thicker soup, mash some of the potatoes before adding cream.
- Use pre-cooked Alfredo sauce for convenience and flavor.
- Store leftovers in the fridge for up to 4 days or freeze for up to 2 months.
- Optional: Add spinach or kale in the last 15 minutes for extra nutrition.
