Description

This Crockpot Creamy Italian Sausage & Potato Soup is a rich, hearty, and comforting one-pot meal featuring savory sausage, tender potatoes, and a creamy, cheesy broth — perfect for bread bowls or a cozy dinner at home.


Ingredients

  • 1 pound Italian sausage (mild or spicy, crumbled)
  • 4 medium russet potatoes, peeled and thinly sliced
  • 1 jar (15 oz) Alfredo sauce
  • 3 cups chicken broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped
  • 4 round bread bowls (optional)

Instructions

  1. Set crockpot to LOW and lightly grease the insert if needed.
  2. In a skillet, brown the sausage over medium heat until cooked through. Drain and set aside.
  3. Add sliced potatoes, onion, garlic, sausage, Alfredo sauce, and chicken broth to the crockpot. Stir gently to combine.
  4. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until potatoes are tender.
  5. Stir in heavy cream and cheddar cheese. Cook on LOW for another 15–20 minutes until melted and creamy.
  6. Season with salt and pepper to taste.
  7. Ladle into bowls or bread bowls. Garnish with parsley and extra cheese if desired.

Notes

  • For a thicker soup, mash some of the potatoes before adding cream.
  • Use pre-cooked Alfredo sauce for convenience and flavor.
  • Store leftovers in the fridge for up to 4 days or freeze for up to 2 months.
  • Optional: Add spinach or kale in the last 15 minutes for extra nutrition.
