- 24 ladyfingers
- 1 cup brewed espresso, cooled
- 16 ounces mascarpone cheese, softened
- 2 cups heavy cream, cold
- 1/2 cup granulated sugar
- 2 tablespoons unsweetened cocoa powder, plus extra for dusting
- 6 ounces dark chocolate, melted and slightly cooled
- 2 large eggs, separated
- 1 teaspoon vanilla extract
Instructions
- Whisk egg yolks with half of the sugar until pale and slightly thickened.
- Add mascarpone cheese and vanilla extract to the yolk mixture and mix until smooth and creamy.
- In a separate bowl, whip the heavy cream until soft peaks form.
- In another clean bowl, beat egg whites until soft peaks form, then gradually add the remaining sugar and continue beating until glossy.
- Fold half of the whipped cream into the mascarpone mixture until combined.
- Stir melted dark chocolate into the remaining whipped cream, then gently fold in the whipped egg whites to create the chocolate mousse.
- Quickly dip each ladyfinger into the cooled espresso and arrange a single layer in the bottom of a rectangular glass dish.
- Spread half of the mascarpone mixture over the soaked ladyfingers.
- Spread the chocolate mousse evenly over the mascarpone layer.
- Repeat with another layer of dipped ladyfingers and the remaining mascarpone mixture.
- Cover and refrigerate for at least 4 hours to set.
- Before serving, dust the top with unsweetened cocoa powder, slice, and serve chilled.
