Description

A rich and creamy layered dessert made with espresso-soaked ladyfingers, smooth mascarpone filling, and airy dark chocolate mousse, finished with a delicate dusting of cocoa powder for an indulgent yet balanced treat.

Ingredients

Units Scale
  • 24 ladyfingers
  • 1 cup brewed espresso, cooled
  • 16 ounces mascarpone cheese, softened
  • 2 cups heavy cream, cold
  • 1/2 cup granulated sugar
  • 2 tablespoons unsweetened cocoa powder, plus extra for dusting
  • 6 ounces dark chocolate, melted and slightly cooled
  • 2 large eggs, separated
  • 1 teaspoon vanilla extract

Instructions

  1. Whisk egg yolks with half of the sugar until pale and slightly thickened.
  2. Add mascarpone cheese and vanilla extract to the yolk mixture and mix until smooth and creamy.
  3. In a separate bowl, whip the heavy cream until soft peaks form.
  4. In another clean bowl, beat egg whites until soft peaks form, then gradually add the remaining sugar and continue beating until glossy.
  5. Fold half of the whipped cream into the mascarpone mixture until combined.
  6. Stir melted dark chocolate into the remaining whipped cream, then gently fold in the whipped egg whites to create the chocolate mousse.
  7. Quickly dip each ladyfinger into the cooled espresso and arrange a single layer in the bottom of a rectangular glass dish.
  8. Spread half of the mascarpone mixture over the soaked ladyfingers.
  9. Spread the chocolate mousse evenly over the mascarpone layer.
  10. Repeat with another layer of dipped ladyfingers and the remaining mascarpone mixture.
  11. Cover and refrigerate for at least 4 hours to set.
  12. Before serving, dust the top with unsweetened cocoa powder, slice, and serve chilled.

Notes

  • Dip ladyfingers quickly to avoid sogginess.
  • Use high quality dark chocolate for the best flavor.
  • Chill overnight for deeper flavor and cleaner slices.
  • Sift cocoa powder before dusting for a smooth finish.
