- 1 lb chicken breast, pounded even
- 2 tablespoons olive oil
- 1/2 white onion, diced
- 3 garlic cloves, minced
- 3/4 cup diced tomato
- 1/2 cup mild pickled jalapeño slices, chopped, plus 12 slices for topping
- 3 tablespoons jalapeño brine
- 1/2 cup mayonnaise
- 3/4 cup Monterey Jack cheese, grated
- 1/2 cup green onion, sliced (green parts only)
- 6 slices cheddar cheese
- 3/4 cup French’s fried onions
- 1 package King’s Hawaiian slider buns, sliced in half
- 2 tablespoons salted butter, melted
- Kosher salt and freshly ground black pepper, to taste

Cook the Chicken:
- Heat a sauté pan over medium heat with olive oil.
- Season the chicken breast with salt and pepper, then cook for 3-4 minutes on one side. Flip, reduce heat, and cook until the internal temperature reaches 165°F.
- Remove from heat, let rest, then shred.

Prepare the Filling:
- In the same pan, sauté the onion and garlic over medium-low heat for 4-6 minutes until softened. Remove from heat.
- In a large bowl, mix together the shredded chicken, sautéed onion and garlic, diced tomato, chopped jalapeños, jalapeño brine, mayo, Monterey Jack cheese, and green onion. Adjust seasoning if needed.

Assemble the Sliders:
- Preheat the oven to 350°F. Grease a 9×13-inch baking dish.
- Place the bottom half of the slider buns in the dish.
- Layer with cheddar cheese slices, the chicken mixture, extra jalapeño slices, and crispy fried onions.
- Add the top buns, then brush with melted butter and sprinkle with black pepper.

- Bake for 18-20 minutes, or until the cheese is melted and the tops are golden brown.
