Description

Flaky vegan croissants filled with creamy avocado, juicy tomato slices, and fresh basil leaves, finished with a light drizzle of olive oil. A fresh, vibrant breakfast option that feels light yet satisfying.

  • 4 large vegan croissants
  • 2 medium fresh tomatoes, sliced
  • 2 large ripe avocados, sliced
  • 1/2 cup fresh basil leaves
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 350°F if you would like to lightly warm the croissants.
  2. Slice the tomatoes and avocados evenly. Toss avocado gently with a pinch of salt and black pepper.
  3. Slice each croissant horizontally without cutting all the way through.
  4. Layer tomato slices inside each croissant.
  5. Add sliced avocado evenly over the tomatoes.
  6. Place fresh basil leaves on top of the avocado layer.
  7. Drizzle olive oil lightly over the filling and sprinkle remaining salt and black pepper.
  8. Warm in the oven for 3 to 4 minutes if desired, or serve immediately for a fresh version.
