A fresh, protein-packed salad combining rotisserie chicken, chickpeas, crisp cucumbers, olives, and a bright homemade tzatziki dressing. Perfect for lunch meal prep, picnics, or a light dinner.

- 2 1/2 cups rotisserie chicken, shredded and chopped
- 15 oz chickpeas, drained and rinsed
- 2/3 cup Kalamata olives, pitted and halved
- 1/2 red onion, thinly sliced
- 2 Persian cucumbers, finely chopped
- 1 cup Greek yogurt
- 3 cloves garlic, mashed
- 1 lemon, juiced
- 3 tablespoons fresh dill, chopped
- 1/3 cup fresh mint, chopped
- 1/2 teaspoon kosher salt
Instructions
- In a large bowl, combine the shredded chicken, chickpeas, olives, red onion, and chopped cucumbers.
- In a separate bowl, whisk together the Greek yogurt, mashed garlic, lemon juice, dill, mint, and kosher salt to make the tzatziki dressing.
- Pour the tzatziki dressing over the salad mixture and toss gently until everything is well coated.
- Taste and adjust seasoning if needed. Chill for 10–20 minutes before serving for best flavor.
Notes
- Use leftover grilled or baked chicken instead of rotisserie if desired.
- Add a splash of olive oil if you prefer a looser dressing.
- Can be stored in the refrigerator up to 3 days.
- Serve stuffed in pita, over greens, or with warm flatbread.
