Description

A fresh, protein-packed salad combining rotisserie chicken, chickpeas, crisp cucumbers, olives, and a bright homemade tzatziki dressing. Perfect for lunch meal prep, picnics, or a light dinner.


Ingredients

  • 2 1/2 cups rotisserie chicken, shredded and chopped
  • 15 oz chickpeas, drained and rinsed
  • 2/3 cup Kalamata olives, pitted and halved
  • 1/2 red onion, thinly sliced
  • 2 Persian cucumbers, finely chopped
  • 1 cup Greek yogurt
  • 3 cloves garlic, mashed
  • 1 lemon, juiced
  • 3 tablespoons fresh dill, chopped
  • 1/3 cup fresh mint, chopped
  • 1/2 teaspoon kosher salt

Instructions

  1. In a large bowl, combine the shredded chicken, chickpeas, olives, red onion, and chopped cucumbers.
  2. In a separate bowl, whisk together the Greek yogurt, mashed garlic, lemon juice, dill, mint, and kosher salt to make the tzatziki dressing.
  3. Pour the tzatziki dressing over the salad mixture and toss gently until everything is well coated.
  4. Taste and adjust seasoning if needed. Chill for 10–20 minutes before serving for best flavor.

Notes

  • Use leftover grilled or baked chicken instead of rotisserie if desired.
  • Add a splash of olive oil if you prefer a looser dressing.
  • Can be stored in the refrigerator up to 3 days.
  • Serve stuffed in pita, over greens, or with warm flatbread.
