- 3 large tomatoes, firm and fresh
- 1 medium white onion
- 1 green bell pepper
- 1 red bell pepper
- 2 cloves garlic, minced
- 1/2 cup fresh parsley, finely chopped
- 1 tbsp tomato paste
- Juice of 1 lemon
- 2 tbsp extra virgin olive oil
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 tsp Aleppo pepper
- 1 tsp sumac
Instructions
- Finely dice the tomatoes, onion, green bell pepper, and red bell pepper by hand or pulse them in a food processor until finely chopped but not pureed.
- Place the vegetables in a large mixing bowl and stir in the minced garlic and chopped parsley.
- Add tomato paste, lemon juice, olive oil, salt, black pepper, Aleppo pepper, and sumac. Mix well until everything is evenly combined.
- Taste and adjust seasoning as needed.
- Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
- Serve chilled or at room temperature with warm bread, pita, or alongside grilled meats.
Notes
- Traditionally, Ezme is made quite spicy—add more Aleppo pepper or a fresh chili if you like extra heat.
- Use ripe, firm tomatoes for the best flavor and texture.
- This dish is best when finely chopped by hand for an authentic texture, though a food processor works in a pinch.
- Letting Ezme rest before serving deepens the flavor.
