- 1 pound lean ground turkey
- 6 cups chopped romaine lettuce
- 1 cup halved cherry tomatoes
- 1 cup canned black beans, drained and rinsed
- 1 cup canned corn kernels, drained
- 1 cup shredded cheddar cheese
- 1 large avocado, diced
- 1 cup fresh salsa
- 1 tablespoon olive oil
- 2 tablespoons taco seasoning
- 1 whole lime, cut into wedges
- 1 teaspoon salt, or to taste
Instructions
- Heat a large skillet over medium heat.
- Add olive oil and ground turkey to the skillet. Sprinkle with taco seasoning and half of the salt.
- Cook the turkey for 7 to 10 minutes, breaking it apart with a spoon, until fully browned and cooked through.
- Remove from heat and let the turkey cool slightly.
- In a large serving bowl, layer chopped romaine, black beans, corn, cherry tomatoes, and shredded cheddar cheese.
- Spoon the cooked turkey evenly over the salad base.
- Top with diced avocado and fresh salsa.
- Squeeze lime juice over the salad and sprinkle with remaining salt if needed.
- Toss gently if desired and serve immediately.
Notes
- Let the turkey cool slightly before adding to the lettuce to prevent wilting.
- For extra heat, add a pinch of chili flakes while cooking the turkey.
- Keep components separate if meal prepping and assemble just before serving.
