Description

A fresh and hearty turkey taco salad loaded with seasoned ground turkey, crisp romaine, black beans, corn, juicy tomatoes, creamy avocado, and shredded cheddar, all topped with zesty salsa and a squeeze of lime.


Ingredients

  • 1 pound lean ground turkey
  • 6 cups chopped romaine lettuce
  • 1 cup halved cherry tomatoes
  • 1 cup canned black beans, drained and rinsed
  • 1 cup canned corn kernels, drained
  • 1 cup shredded cheddar cheese
  • 1 large avocado, diced
  • 1 cup fresh salsa
  • 1 tablespoon olive oil
  • 2 tablespoons taco seasoning
  • 1 whole lime, cut into wedges
  • 1 teaspoon salt, or to taste

Instructions

  1. Heat a large skillet over medium heat.
  2. Add olive oil and ground turkey to the skillet. Sprinkle with taco seasoning and half of the salt.
  3. Cook the turkey for 7 to 10 minutes, breaking it apart with a spoon, until fully browned and cooked through.
  4. Remove from heat and let the turkey cool slightly.
  5. In a large serving bowl, layer chopped romaine, black beans, corn, cherry tomatoes, and shredded cheddar cheese.
  6. Spoon the cooked turkey evenly over the salad base.
  7. Top with diced avocado and fresh salsa.
  8. Squeeze lime juice over the salad and sprinkle with remaining salt if needed.
  9. Toss gently if desired and serve immediately.

Notes

  • Let the turkey cool slightly before adding to the lettuce to prevent wilting.
  • For extra heat, add a pinch of chili flakes while cooking the turkey.
  • Keep components separate if meal prepping and assemble just before serving.
