Description

  • 1 cup plain breadcrumbs
  • 2 large eggs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup ketchup, divided
  • 1/4 cup milk
  • 2 tablespoons fresh parsley, finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F and lightly grease a standard muffin tin with olive oil.
  2. In a large mixing bowl, combine ground turkey, breadcrumbs, eggs, finely chopped onion, minced garlic, 1/2 cup of the ketchup, milk, parsley, salt, and black pepper. Mix gently until just combined.
  3. Ensure each muffin cup is evenly coated with oil to prevent sticking.
  4. Divide the turkey mixture evenly among the muffin cups, pressing lightly to shape. Spoon the remaining 1/2 cup of ketchup evenly over the tops.
  5. Bake for 20 to 25 minutes, or until the internal temperature reaches 165°F and the tops are slightly caramelized.
  6. Remove from the oven and let rest in the pan for 5 minutes before carefully lifting out.
