Ingredients

  • 1 loaf of Trader Joe’s sun-dried tomato focaccia
  • 1 (7-ounce) package deli turkey
  • 1 large tomato, thinly sliced
  • Handful of greens (sprouts, microgreens, spinach, etc.)
  • Few pieces of thinly sliced red onion
  • 1/4 cup mayo
  • 1/4 cup pesto (Costco brand or your preferred brand)

Instructions

  1. Preheat the oven to 400°F (200°C). Toast the focaccia in the oven for 5-8 minutes until lightly crispy.
  2. In a small bowl, mix the mayo and pesto to make the pesto mayo.
  3. Slice the focaccia horizontally through the center, keeping the top piece flat and set it aside.
  4. Spread pesto mayo on the bottom layer of the focaccia. Layer with turkey, tomato slices, greens, and red onion. Add dollops of pesto mayo on top of the greens and onions.
  5. Place the top piece of focaccia gently back on top and press down lightly. Slice the sandwich into 6 pieces by cutting down the middle and across 3 times.
  6. Serve immediately and enjoy your sandwich goals!
