If you’re looking for high-protein meals or recipes to try, this dish is a must! Serve it as a simple high-protein meal or a hearty snack for taco lovers.

Ingredients

  • 1 lb. ground beef

  • 1/2 medium onion, diced

  • 1/2 bell pepper, diced

  • 1 cup salsa

  • 3 cups (8 oz.) medium pasta shells, uncooked

  • 1 oz taco seasoning

  • 4 cups beef broth

  • 1 cup Gordo’s Cheese Dip (any variety)

  • Salt and pepper, to taste

  • 1 green onion, sliced

Instructions

  • In a large deep skillet or Dutch oven, brown the ground beef over medium heat.

  • Add the diced onions and bell peppers to the beef. Stir and cook for about 5 minutes.

  • Drain any excess oil from the pan.

  • Stir in the uncooked pasta shells, taco seasoning, and salsa.

  • Pour in the beef broth, cover, and bring to a boil (about 5 minutes).

  • Once boiling, remove the lid and cook over medium heat for 10-12 minutes, stirring occasionally, until the pasta is tender and most of the liquid has reduced.

  • Stir in the Gordo’s Cheese Dip until fully melted and combined.

  • Turn off the heat and let the pasta sit for 5 minutes before serving.

  • Garnish with sliced green onions.

  • For an extra cheesy version, heat an additional 1/2 cup of Gordo’s Cheese Dip and drizzle over the dish before serving.

Notes

  • Swap ground beef for ground turkey or chicken for a leaner version.

  • Use a spicier salsa or add red pepper flakes for more heat.

  • Top with crushed tortilla chips for a crunchy texture.
