Description

A comforting and flavorful casserole combining mashed sweet potatoes, seasoned ground beef, black beans, and melted cheddar cheese, perfect for an easy weeknight dinner.


Ingredients

  • 2 large sweet potatoes, mashed
  • 1 lb. ground beef, browned
  • 1 15 oz. can black beans, rinsed
  • 1 cup shredded cheddar cheese
  • 1/2 tsp. smoked paprika
  • 1/2 tsp. onion powder
  • 1/2 tsp. garlic powder
  • 1/2 tsp. cumin
  • 1/4 tsp. salt
  • 1/4 tsp. pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Peel and boil sweet potatoes until tender, then mash and set aside.
  3. Brown the ground beef in a skillet over medium heat, seasoning with smoked paprika, onion powder, garlic powder, cumin, salt, and pepper.
  4. Drain and rinse black beans and add them to the cooked beef, stirring to combine.
  5. In a casserole dish, layer the mashed sweet potatoes on the bottom, followed by the beef and black bean mixture.
  6. Sprinkle shredded cheddar cheese evenly on top.
  7. Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.
  8. Remove from oven and let it cool slightly before serving.

Notes

  • Optional: top with sour cream, chopped cilantro, or sliced jalapeños for extra flavor.
  • You can prepare this casserole ahead of time and refrigerate before baking.
  • For a vegetarian version, substitute ground beef with cooked lentils or a plant-based meat alternative.
