- 2 large sweet potatoes, mashed
- 1 lb. ground beef, browned
- 1 15 oz. can black beans, rinsed
- 1 cup shredded cheddar cheese
- 1/2 tsp. smoked paprika
- 1/2 tsp. onion powder
- 1/2 tsp. garlic powder
- 1/2 tsp. cumin
- 1/4 tsp. salt
- 1/4 tsp. pepper
Instructions
- Preheat the oven to 375°F (190°C).
- Peel and boil sweet potatoes until tender, then mash and set aside.
- Brown the ground beef in a skillet over medium heat, seasoning with smoked paprika, onion powder, garlic powder, cumin, salt, and pepper.
- Drain and rinse black beans and add them to the cooked beef, stirring to combine.
- In a casserole dish, layer the mashed sweet potatoes on the bottom, followed by the beef and black bean mixture.
- Sprinkle shredded cheddar cheese evenly on top.
- Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.
- Remove from oven and let it cool slightly before serving.
Notes
- Optional: top with sour cream, chopped cilantro, or sliced jalapeños for extra flavor.
- You can prepare this casserole ahead of time and refrigerate before baking.
- For a vegetarian version, substitute ground beef with cooked lentils or a plant-based meat alternative.
