Ingredients
- 2 large sweet potatoes, peeled and sliced
- 3 cups fresh spinach
- 4 large eggs

Instructions
1️⃣ Preheat & Prep – Preheat oven to 375°F (190°C). Grease a baking dish lightly with oil or butter.
2️⃣ Layer the Sweet Potatoes – Arrange the sliced sweet potatoes in the bottom of the baking dish.
3️⃣ Add Spinach & Cheese – Evenly spread the fresh spinach over the sweet potatoes. If using, sprinkle crumbled feta cheese on top.
4️⃣ Whisk the Egg Mixture – In a bowl, whisk together eggs, milk, garlic powder, onion powder, salt, and black pepper until smooth.
5️⃣ Pour & Bake – Pour the egg mixture evenly over the spinach and sweet potatoes. Bake for 30-35 minutes or until the eggs are set and the top is golden brown.
