- 2 tbsp olive oil
For the Sauce:
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 cup diced tomatoes (fresh or canned)
- 1 tbsp tomato paste
- 1 cup chicken broth
- 1/2 tsp dried thyme
- 1/2 tsp dried oregano
- 1 bay leaf
- 1/2 tsp crushed red pepper flakes (optional)
For Garnish:
- Fresh parsley, chopped
Instructions
1️⃣ Season & Sear the Chicken:
- Pat chicken dry and season with salt, pepper, smoked paprika, garlic powder, and onion powder.
- Heat olive oil in a deep skillet over medium-high heat.
- Sear the chicken for 3-4 minutes per side until golden brown. Remove and set aside.
2️⃣ Sauté the Aromatics:
- In the same pan, sauté onions and garlic until fragrant.
- Stir in diced tomatoes, tomato paste, thyme, oregano, and crushed red pepper flakes.
3️⃣ Simmer the Stew:
- Pour in chicken broth, add bay leaf, and return the chicken to the pan.
- Bring to a simmer, cover, and cook for 30 minutes over low heat, stirring occasionally.
4️⃣ Finish & Serve:
- Remove the bay leaf, taste, and adjust seasoning if needed.
- Garnish with fresh parsley and serve hot with rice, mashed potatoes, or crusty bread.
