Description

This Succulent Stewed Chicken is a comforting, hearty dish packed with tender chicken simmered in a rich, flavorful sauce. Perfect for an easy dinner recipe or high-protein meal, this dish pairs wonderfully with rice, mashed potatoes, or crusty bread. For the Chicken:

  • 2 lbs bone-in, skinless chicken thighs or drumsticks
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 2 tbsp olive oil

For the Sauce:

  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup diced tomatoes (fresh or canned)
  • 1 tbsp tomato paste
  • 1 cup chicken broth
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • 1 bay leaf
  • 1/2 tsp crushed red pepper flakes (optional)

For Garnish:

 
  • Fresh parsley, chopped

Instructions

1️⃣ Season & Sear the Chicken:

  • Pat chicken dry and season with salt, pepper, smoked paprika, garlic powder, and onion powder.
  • Heat olive oil in a deep skillet over medium-high heat.
  • Sear the chicken for 3-4 minutes per side until golden brown. Remove and set aside.

2️⃣ Sauté the Aromatics:

  • In the same pan, sauté onions and garlic until fragrant.
  • Stir in diced tomatoes, tomato paste, thyme, oregano, and crushed red pepper flakes.

3️⃣ Simmer the Stew:

  • Pour in chicken broth, add bay leaf, and return the chicken to the pan.
  • Bring to a simmer, cover, and cook for 30 minutes over low heat, stirring occasionally.

4️⃣ Finish & Serve:

 

  • Remove the bay leaf, taste, and adjust seasoning if needed.
  • Garnish with fresh parsley and serve hot with rice, mashed potatoes, or crusty bread.

Notes

✔️ For extra depth, add a splash of Worcestershire sauce or soy sauce to the stew.
✔️ Make it spicier by adding chopped chili peppers or more red pepper flakes.
