Instructions
- In a large mixing bowl, beat the softened cream cheese and powdered sugar until completely smooth and creamy.
- Add the vanilla extract and mix until combined.
- In a separate bowl, whip the cold heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until light and fluffy.
- In another bowl, combine the crushed graham crackers, crushed freeze dried strawberries, and melted butter. Stir until the mixture resembles damp crumbs.
- Scoop small portions of the cheesecake mixture and roll into bite sized balls.
- Roll each ball in the strawberry crunch mixture until fully coated.
- Place the coated bites on a parchment lined baking sheet and refrigerate for at least 1 hour, or until firm.
- Serve chilled and enjoy.
