Description

Creamy, no-bake cheesecake bites coated in a sweet strawberry crunch crumb. These nostalgic little treats are rich, fruity, and perfectly bite-sized for parties or everyday indulgence.


Ingredients

  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream, cold
  • 1 1/2 cups graham crackers, finely crushed
  • 1 cup freeze dried strawberries, finely crushed
  • 3 tablespoons melted butter

Instructions

  1. In a large mixing bowl, beat the softened cream cheese and powdered sugar until completely smooth and creamy.
  2. Add the vanilla extract and mix until combined.
  3. In a separate bowl, whip the cold heavy cream until stiff peaks form.
  4. Gently fold the whipped cream into the cream cheese mixture until light and fluffy.
  5. In another bowl, combine the crushed graham crackers, crushed freeze dried strawberries, and melted butter. Stir until the mixture resembles damp crumbs.
  6. Scoop small portions of the cheesecake mixture and roll into bite sized balls.
  7. Roll each ball in the strawberry crunch mixture until fully coated.
  8. Place the coated bites on a parchment lined baking sheet and refrigerate for at least 1 hour, or until firm.
