- 1 cup fresh strawberries, finely diced
- 8 ounces cream cheese, softened
- 1/2 cup powdered sugar
Instructions
- Preheat oven to 350°F and line baking sheets with parchment paper.
- In a medium bowl, whisk together all purpose flour, baking powder, and salt.
- In a large bowl, cream softened butter and granulated sugar until light and fluffy.
- Add eggs and vanilla extract to the butter mixture and mix until smooth and fully combined.
- Gradually add the dry ingredients to the wet ingredients and mix just until incorporated.
- Gently fold in the finely diced strawberries.
- In a separate bowl, beat cream cheese and powdered sugar until smooth. Chill for 15 minutes to firm slightly.
- Scoop portions of cookie dough, flatten slightly, place a small spoonful of cream cheese filling in the center, and wrap the dough around to seal completely.
- Place filled dough balls on prepared baking sheets, spacing evenly apart.
- Bake for 12 to 15 minutes until edges are lightly golden.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- Pat strawberries dry before folding into the dough to prevent excess moisture.
- Chill the dough for 30 minutes if it becomes too soft to handle.
- Seal the dough completely around the filling to prevent leaking.
