Description

Soft and tender Strawberry Cheesecake Cookies filled with a creamy sweetened cream cheese center and bursts of fresh strawberries. A bakery style treat that combines classic cheesecake flavor with a buttery cookie base.


Ingredients

  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup fresh strawberries, finely diced
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar

Instructions

  1. Preheat oven to 350°F and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together all purpose flour, baking powder, and salt.
  3. In a large bowl, cream softened butter and granulated sugar until light and fluffy.
  4. Add eggs and vanilla extract to the butter mixture and mix until smooth and fully combined.
  5. Gradually add the dry ingredients to the wet ingredients and mix just until incorporated.
  6. Gently fold in the finely diced strawberries.
  7. In a separate bowl, beat cream cheese and powdered sugar until smooth. Chill for 15 minutes to firm slightly.
  8. Scoop portions of cookie dough, flatten slightly, place a small spoonful of cream cheese filling in the center, and wrap the dough around to seal completely.
  9. Place filled dough balls on prepared baking sheets, spacing evenly apart.
  10. Bake for 12 to 15 minutes until edges are lightly golden.
  11. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • Pat strawberries dry before folding into the dough to prevent excess moisture.
  • Chill the dough for 30 minutes if it becomes too soft to handle.
