Description

These Firecracker Meatballs are a homemade version of the popular Hello Fresh dish! Juicy, tender beef meatballs are tossed in a sweet, savory, and spicy sauce, creating a flavor-packed meal that pairs perfectly with rice or veggies. A quick and easy 30-minute dinner that’s sure to be a hit!


Ingredients

For the Meatballs:

  • 1 pound 80% lean ground beef (or 1/2 ground beef, 1/2 ground pork)

  • 1 large egg, beaten

  • 1/4 cup panko breadcrumbs

  • 1/4 cup finely chopped onion

  • 2 teaspoons minced garlic

  • 1 thumb-sized piece of ginger, grated

  • 1 tablespoon soy sauce

  • 3/4 teaspoon Kosher salt

  • 1/4 teaspoon ground black pepper

For the Firecracker Sauce:

 
  • 1/4 cup mayonnaise

  • 1/4 cup sour cream

  • 1 1/2 tablespoons honey

  • 2 teaspoons sriracha sauce (adjust to taste)

  • 2 teaspoons soy sauce


Instructions

. Preheat & Prep:
Preheat oven to 400°F (200°C). Line a baking sheet with foil and spray with non-stick cooking spray.

2. Make the Meatballs:
In a large bowl, combine the ground beef, egg, panko, onion, garlic, ginger, soy sauce, salt, and pepper. Mix until just combined.

3. Form & Bake:
Use a medium cookie scoop or spoon to form 1 ½-inch meatballs. Place them evenly on the prepared baking sheet.
Bake for 17-20 minutes, turning halfway through for even browning.

4. Prepare the Firecracker Sauce:
While the meatballs bake, whisk together mayonnaise, sour cream, honey, soy sauce, and sriracha in a bowl.

 

5. Toss & Serve:
Once the meatballs are cooked through, toss them in the firecracker sauce until well coated.
Serve over rice, noodles, or roasted vegetables.


Notes

  • Spice Level: Adjust the sriracha to make it mild or extra spicy!

  • Meal Prep: Store leftovers in an airtight container in the fridge for up to 3 days.

 

  • Make It Healthier: Swap Greek yogurt for sour cream in the sauce.
