Description

Tender zucchini slices sautéed until lightly golden and coated in a glossy sweet and spicy soy sesame sauce. This quick and flavorful vegetable dish delivers bold Asian inspired flavor in under 20 minutes.


Ingredients

  • 4 medium zucchini, sliced into 1/2 inch rounds
  • 3 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 3 garlic cloves, minced
  • 1 teaspoon red chili flakes
  • 3 green onions, sliced
  • 1 tablespoon sesame seeds
  • 1 tablespoon olive oil

Instructions

  1. Heat a large skillet over medium high heat.
  2. In a small bowl, whisk together soy sauce, sesame oil, honey, rice vinegar, minced garlic, and red chili flakes.
  3. Add olive oil to the hot skillet and swirl to coat.
  4. Add zucchini slices in a single layer and cook for 3 to 4 minutes per side until lightly golden and tender.
  5. Pour the sauce over the zucchini and toss gently for 1 to 2 minutes until the sauce thickens slightly and coats the slices evenly.
  6. Remove from heat and sprinkle with sliced green onions and sesame seeds.
  7. Serve immediately while warm.
