Description

These Smoky Salmon Caesar Lettuce Wraps are a fresh and flavorful twist on a classic Caesar salad, featuring smoky salmon, crunchy pepitas, and creamy dressing, all wrapped in crisp romaine lettuce.


Ingredients

  • 2 packs of Acme Salmon Candy
  • 6 large romaine lettuce leaves
  • 1/4 cup breadcrumbs
  • 2 Persian cucumbers
  • slices of red onion
  • 1/4 cup pepitas
The Dressing:
  • 2 tbsp capers, roughly chopped
  • 1 egg yolk
  • juice of one lemon
  • 1/4 cup olive oil
  • 1 tbsp Dijon mustard
  • 2 tbsp Greek yogurt or sour cream
  • 3 tbsp grated parmesan cheese
  • sea salt
  • pepper

Instructions

  1. Make the dressing by combining capers, egg yolk, lemon juice, Dijon mustard, sour cream, and parmesan in a bowl. While whisking, slowly drizzle in olive oil until well combined. Season with salt and pepper, and adjust the olive oil for desired creaminess.
  2. In the same bowl, add sliced red onion, pepitas, and the Acme Salmon Candy, broken into bite-sized pieces. Mix until creamy and combined.
  3. In a skillet, add breadcrumbs over medium-low heat and stir frequently for about 5 minutes or until they start to brown.
  4. Assemble the lettuce wraps by adding the salmon Caesar mixture to each leaf and topping with the crispy breadcrumbs.
  5. Enjoy!

Notes

  • Adjust the level of creaminess in the dressing by adding more olive oil as needed.
  • For a crunchier texture, use extra breadcrumbs for topping.
  • Feel free to substitute the Greek yogurt with sour cream for a slightly different flavor.
