- 2 packs of Acme Salmon Candy
- 6 large romaine lettuce leaves
- 1/4 cup breadcrumbs
- 2 Persian cucumbers
- slices of red onion
- 1/4 cup pepitas
- 2 tbsp capers, roughly chopped
- 1 egg yolk
- juice of one lemon
- 1/4 cup olive oil
- 1 tbsp Dijon mustard
- 2 tbsp Greek yogurt or sour cream
- 3 tbsp grated parmesan cheese
- sea salt
- pepper
Instructions
- Make the dressing by combining capers, egg yolk, lemon juice, Dijon mustard, sour cream, and parmesan in a bowl. While whisking, slowly drizzle in olive oil until well combined. Season with salt and pepper, and adjust the olive oil for desired creaminess.
- In the same bowl, add sliced red onion, pepitas, and the Acme Salmon Candy, broken into bite-sized pieces. Mix until creamy and combined.
- In a skillet, add breadcrumbs over medium-low heat and stir frequently for about 5 minutes or until they start to brown.
- Assemble the lettuce wraps by adding the salmon Caesar mixture to each leaf and topping with the crispy breadcrumbs.

- Adjust the level of creaminess in the dressing by adding more olive oil as needed.
- For a crunchier texture, use extra breadcrumbs for topping.
