Description

Juicy smashed beef kebabs seasoned with garlic and fresh parsley, pan seared until golden and served with a cool, creamy cucumber yogurt sauce. A perfect balance of savory richness and refreshing tang in every bite.

Ingredients

Units Scale
  • 1 pound ground beef (about 450 grams)
  • 3 cloves garlic, minced
  • 2 tablespoons fresh parsley, finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 medium cucumber, grated
  • 1 cup plain yogurt (about 240 grams)
  • 1 tablespoon fresh lemon juice

Instructions

  1. Preheat a skillet or grill pan over medium high heat and lightly coat with olive oil.
  2. In a mixing bowl, combine ground beef, minced garlic, chopped parsley, salt, and black pepper. Mix gently until just combined.
  3. Shape the beef mixture into oval, slightly flattened kebabs for even cooking.
  4. Place the kebabs in the hot pan and cook for 4 to 5 minutes per side until browned on the outside and cooked through.
  5. In a small bowl, mix grated cucumber, plain yogurt, lemon juice, and a pinch of salt. Stir until smooth and creamy.
  6. Let the kebabs rest for a few minutes, then serve warm with the cucumber yogurt sauce on the side.

Notes

  • Squeeze excess moisture from the grated cucumber to prevent a watery sauce.
  • Do not overmix the beef to keep the texture tender and juicy.
  • Cook in batches if needed to avoid overcrowding the pan.
  • Adjust lemon and salt in the yogurt sauce to taste before serving.
