Scale
- 1 pound ground beef (about 450 grams)
- 3 cloves garlic, minced
- 2 tablespoons fresh parsley, finely chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1 medium cucumber, grated
- 1 cup plain yogurt (about 240 grams)
- 1 tablespoon fresh lemon juice
Instructions
- Preheat a skillet or grill pan over medium high heat and lightly coat with olive oil.
- In a mixing bowl, combine ground beef, minced garlic, chopped parsley, salt, and black pepper. Mix gently until just combined.
- Shape the beef mixture into oval, slightly flattened kebabs for even cooking.
- Place the kebabs in the hot pan and cook for 4 to 5 minutes per side until browned on the outside and cooked through.
- In a small bowl, mix grated cucumber, plain yogurt, lemon juice, and a pinch of salt. Stir until smooth and creamy.
- Let the kebabs rest for a few minutes, then serve warm with the cucumber yogurt sauce on the side.
Notes
- Squeeze excess moisture from the grated cucumber to prevent a watery sauce.
- Do not overmix the beef to keep the texture tender and juicy.
- Cook in batches if needed to avoid overcrowding the pan.
- Adjust lemon and salt in the yogurt sauce to taste before serving.
