- 3 pounds beef chuck roast, trimmed
- 1 tablespoon Italian seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 cups beef broth
- 8 slices provolone cheese
- 8 hoagie rolls
Instructions
- Set the slow cooker to low heat.
- In a small bowl, mix Italian seasoning, garlic powder, onion powder, dried oregano, dried basil, salt, and black pepper.
- Place the beef chuck roast in the slow cooker and rub the seasoning mixture evenly over all sides.
- Pour the beef broth around the roast without washing off the seasoning.
- Cover and cook on low for 8 hours, or until the beef is fork tender and shreds easily.
- Remove the roast and shred it with two forks.
- Return the shredded beef to the slow cooker and stir into the juices.
- Fill each hoagie roll with shredded beef and top with a slice of provolone cheese.
- Place the sandwiches under a broiler for 1 to 2 minutes until the cheese melts, if desired.
- Serve warm.

- Cook on low heat for the most tender texture.
- Lightly toast the hoagie rolls before filling to prevent sogginess.
