Chicken:
- 1 1/2 lbs chicken breasts, cubed
- Onion powder, garlic powder, salt (to taste)
- 2 tbsp olive oil
Alfredo Bake:
- 1 lb broccoli, cut into small florets
- 8 oz Alfredo sauce (see homemade version below)
- 1 cup cottage cheese, drained
- Onion powder, garlic powder, salt (to taste)
- 1 1/2 cups shredded Parmesan cheese
- 1 1/2 cups shredded mozzarella cheese
Instructions
- Preheat oven to 350°F.
- Arrange 24 crackers in a single layer on a baking sheet or 9×13 pan.
- Layer ham and Swiss cheese on each cracker, then top with another cracker to make mini sandwiches.
- In a small bowl, melt butter and mix in Dijon mustard, garlic powder, and poppy seeds.
- Brush the butter mixture over the tops of the cracker sandwiches.
- Bake uncovered for 12-15 minutes, until cheese melts and crackers are golden brown.
- Let cool for 2-3 minutes, then serve and enjoy!
Notes
- Preheat oven to 375°F. Lightly grease a 9×13″ baking dish with olive oil.
- In a food processor, blend cottage cheese until smooth. Mix with Alfredo sauce, garlic powder, onion powder, and salt to taste.
- Season chicken cubes with onion powder, garlic powder, and salt.
- Heat olive oil in a large skillet over medium-high heat. Cook chicken until golden brown on the sides. Remove from heat.

- Next, add cooked chicken on top.
