- 1 cup almond flour
- 1/4 cup coconut oil, melted
- 3 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1 cup Medjool dates, pitted
- 2 tablespoons almond butter
- 1 1/2 cups refined sugar free dark chocolate
- 1/4 teaspoon salt
Instructions
- Line a loaf pan with parchment paper, leaving overhang for easy removal.
- In a mixing bowl, combine almond flour, melted coconut oil, maple syrup, vanilla extract, and salt until crumbly.
- Press the mixture firmly into the bottom of the prepared pan to form an even base.
- In a food processor, blend Medjool dates and almond butter until smooth and caramel-like.
- Spread the date caramel evenly over the pressed base.
- Chill the pan in the refrigerator for 30 minutes until the caramel layer firms up.
- Gently melt the dark chocolate and pour it evenly over the chilled caramel layer.
- Return to the refrigerator until the chocolate is fully set, then slice into bars.
Notes
- Use soft Medjool dates for the smoothest caramel texture.
- Press each layer firmly for clean, even slices.
- Store bars chilled for best texture.
