Description

Buttery oat crumble layered with sweet and tart raspberry jam, baked until golden and perfectly chewy. These raspberry jam oat bars are rustic, comforting, and ideal for snacks, dessert, or coffee breaks.


Ingredients

  • 1 1/2 cups rolled oats
  • 1 cup all purpose flour
  • 3/4 cup brown sugar, packed
  • 3/4 cup butter, melted
  • 3/4 cup raspberry jam
  • 1/2 cup fresh raspberries (optional)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350 degrees Fahrenheit. Line an 8×8 inch baking pan with parchment paper.
  2. In a large mixing bowl, combine rolled oats, flour, brown sugar, baking powder, and salt.
  3. Pour in melted butter and vanilla extract. Mix until the mixture becomes crumbly and evenly combined.
  4. Press two thirds of the oat mixture firmly into the bottom of the prepared pan to form the base.
  5. Spread raspberry jam evenly over the base layer.
  6. Scatter fresh raspberries over the jam if using.
  7. Sprinkle the remaining oat mixture evenly over the top.
  8. Bake for 30 to 35 minutes until the top is golden brown and the jam is bubbling slightly.
  9. Remove from oven and allow to cool completely before slicing into 9 squares.

  • Press the base firmly to prevent crumbling.
  • Store in an airtight container for up to 3 days at room temperature.
