- 1 1/2 cups rolled oats
- 1 cup all purpose flour
- 3/4 cup brown sugar, packed
- 3/4 cup butter, melted
- 3/4 cup raspberry jam
- 1/2 cup fresh raspberries (optional)
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350 degrees Fahrenheit. Line an 8×8 inch baking pan with parchment paper.
- In a large mixing bowl, combine rolled oats, flour, brown sugar, baking powder, and salt.
- Pour in melted butter and vanilla extract. Mix until the mixture becomes crumbly and evenly combined.
- Press two thirds of the oat mixture firmly into the bottom of the prepared pan to form the base.
- Spread raspberry jam evenly over the base layer.
- Scatter fresh raspberries over the jam if using.
- Sprinkle the remaining oat mixture evenly over the top.
- Bake for 30 to 35 minutes until the top is golden brown and the jam is bubbling slightly.
- Remove from oven and allow to cool completely before slicing into 9 squares.
