Description

This puffed omelette is light, airy, and beautifully golden, with a soft cloud-like center that feels both cozy and a little elegant. It comes together with simple ingredients, yet the texture makes it feel like a special breakfast or brunch worth savoring.

Ingredients

Scale
  • 3 large eggs, separated
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon butter
  • 1 tablespoon milk

Instructions

  1. Heat a nonstick pan over low to medium heat and add the butter until melted.
  2. In one bowl, whisk the egg yolks with the milk, salt, and black pepper until smooth.
  3. In a separate clean bowl, whip the egg whites until soft peaks form.
  4. Gently fold the whipped egg whites into the yolk mixture, being careful not to deflate the air.
  5. Pour the mixture into the prepared pan and cook slowly until the bottom is set and the top is slightly firm.
  6. Carefully fold the omelette in half and let it finish cooking for a brief moment.
  7. Transfer to a plate and serve immediately while warm and fluffy.

Notes

  • Use fresh eggs for the best lift and flavor.
  • Keep the heat gentle so the omelette stays tall and tender.
  • Do not overmix when folding, or the airy texture will be lost.
  • Serve right away for the best texture.
