Description

These Spicy Chickpea Patties are a delicious vegan protein-packed dish that’s full of flavor and spice. Made with chickpeas, zucchini, and aromatic spices, they’re perfect for a healthy family dinner, quick lunch, or a tasty vegan appetizer. Serve them with hummus, salad, or a garlicky cashew sauce for an irresistible meal!


Ingredients

  • 3 1/2 cups cooked chickpeas
  • 2 tbsp dried mint
  • 1 tbsp paprika
  • 1 tbsp chili powder
  • 1 tbsp olive oil (+ more for frying)
  • 3 scallions, thinly chopped
  • 1/2 cup zucchini, finely chopped
  • 3 garlic cloves, minced
  • Salt and black pepper, to taste

Instructions

  1. Prepare the Mixture: In a large bowl, add chickpeas, dried mint, paprika, chili powder, olive oil, scallions, zucchini, garlic, salt, and pepper.
  2. Mash & Mix: Use an immersion blender to mash the mixture, leaving about 1/4 of it slightly chunky for texture. Adjust seasoning as needed.
  3. Shape the Patties: Use a scoop or tablespoon to portion out the mixture. Wet your hands and shape small patties to ensure easy flipping while cooking.
  4. Cook the Patties:
    • Heat a nonstick pan with olive oil over medium heat.
    • Place the patties in the pan, leaving space between them.
    • Cook until golden brown on both sides, flipping carefully.
  5. Serve: Enjoy with salad, hummus, or a garlicky cashew or tahini sauce!

  • Baking Option: Bake at 375°F (190°C) for 20 minutes, flipping halfway through.
