Description

Enjoy the comforting flavors of homemade pierogies in this easy, cheesy Pierogi Lasagna! Layers of creamy mashed potatoes, caramelized onions, crispy bacon, and gooey melted cheese come together in a rich and satisfying casserole. This dish is perfect for using up leftover mashed potatoes and makes a great weeknight dinner or potluck favorite.


Ingredients

  • 3 tbsp unsalted butter
  • 3 cups yellow onions, chopped
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 12 cooked lasagna noodles
  • 6 cups mashed potatoes
  • 5 strips cooked bacon, crumbled
 
  • Salt and pepper, to taste

Instructions

  • Preheat & Prep

    • Preheat the oven to 350°F (175°C).
    • Grease a 9×13-inch casserole dish with cooking spray.
  • Caramelize the Onions

    • In a skillet over medium heat, melt the butter.
    • Add chopped onions and sauté until translucent and golden brown.
    • Remove from heat and set aside.
  • Layer the Lasagna

    • In a bowl, mix cheddar and mozzarella cheese together.
    • Place 3 lasagna noodles on the bottom of the dish.
    • Spread ⅓ of the mashed potatoes evenly over the noodles.
    • Add ⅓ of the caramelized onions on top.
    • Sprinkle ¼ of the cheese mixture over the onions.
    • Repeat this layering two more times.
  • Final Layer & Topping

    • Add a final layer of noodles.
    • Top with crumbled bacon and the remaining cheddar cheese.
    • Sprinkle with salt and pepper.
  • Bake the Lasagna

    • Cover the dish with foil and bake for 30 minutes.
    • Remove the foil and bake 10 more minutes to fully melt the cheese.

 

  • Serve & Enjoy

    • Let the lasagna rest for 10 minutes before slicing.
    • Garnish with green onions, chives, or sour cream if desired.

  • Storage: Store leftovers in an airtight container in the fridge for up to 4 days.
  • Make-Ahead: Assemble the lasagna ahead and refrigerate overnight before baking.
