- 3 tbsp unsalted butter
- 3 cups yellow onions, chopped
- 2 cups shredded sharp cheddar cheese
- 1 cup shredded mozzarella cheese
- 12 cooked lasagna noodles
- 6 cups mashed potatoes
- 5 strips cooked bacon, crumbled
- Salt and pepper, to taste

Preheat & Prep
- Preheat the oven to 350°F (175°C).
- Grease a 9×13-inch casserole dish with cooking spray.

Caramelize the Onions
- In a skillet over medium heat, melt the butter.
- Add chopped onions and sauté until translucent and golden brown.
- Remove from heat and set aside.

Layer the Lasagna
- In a bowl, mix cheddar and mozzarella cheese together.
- Place 3 lasagna noodles on the bottom of the dish.
- Spread ⅓ of the mashed potatoes evenly over the noodles.
- Add ⅓ of the caramelized onions on top.
- Sprinkle ¼ of the cheese mixture over the onions.
- Repeat this layering two more times.

Final Layer & Topping
- Add a final layer of noodles.
- Top with crumbled bacon and the remaining cheddar cheese.
- Sprinkle with salt and pepper.

Bake the Lasagna
- Cover the dish with foil and bake for 30 minutes.
- Remove the foil and bake 10 more minutes to fully melt the cheese.

- Let the lasagna rest for 10 minutes before slicing.
