- 24 petit beurre biscuits

- 2 tablespoons cocoa powder
- 1 1/2 cups heavy cream, cold
- 2 tablespoons powdered sugar
Instructions
- Preheat oven to 350 degrees Fahrenheit.
- Melt the unsalted butter with 100 grams of the dark chocolate until smooth. Stir well.
- Add the granulated sugar and mix until combined.
- Beat in the eggs one at a time until smooth and glossy.
- In a separate bowl, whisk together the flour and cocoa powder.
- Fold the dry ingredients into the chocolate mixture just until combined.
- Arrange the petit beurre biscuits in a single layer at the bottom of a rectangular baking dish.
- Pour the brownie batter evenly over the biscuits and smooth the top.
- Bake for 18 to 22 minutes, until the brownie is set but still slightly fudgy in the center. Allow to cool completely.
- Melt the remaining 100 grams of dark chocolate and let it cool slightly.
- Whip the heavy cream with powdered sugar to soft peaks.
- Gently fold the whipped cream into the melted chocolate until smooth and airy to create the mousse.
- Spread the chocolate mousse evenly over the cooled brownie layer.
- Refrigerate for at least 4 hours before slicing and serving chilled.
