- 2 cups mashed sweet potatoes, cooked and well mashed
- 1 cup almond flour
- 1 large egg
- 2 cups shredded mozzarella cheese, divided
- 1 cup pizza sauce
- 1 cup sliced pepperoni
- 2 tablespoons hot honey
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes, optional
Instructions
- Preheat oven to 400°F. Line a baking sheet or pizza pan with parchment paper and lightly brush with olive oil.
- In a mixing bowl, combine mashed sweet potatoes, almond flour, egg, 1 cup of shredded mozzarella, salt, and black pepper. Mix until fully combined.
- Transfer the mixture onto the prepared baking sheet and shape into a round crust about 1/4 inch thick.
- Prebake the crust for 15 minutes until lightly firm.
- Remove from oven and spread pizza sauce evenly over the crust. Sprinkle the remaining mozzarella cheese on top and arrange sliced pepperoni evenly.
- Return to the oven and bake for 12 to 15 minutes, until cheese is melted and bubbly and edges are lightly golden.
- Remove from oven and drizzle hot honey evenly over the top. Sprinkle red pepper flakes if desired.
- Let rest for 5 minutes before slicing and serving.
Notes
- Drain excess moisture from sweet potatoes to prevent a soft crust.
- Use freshly shredded mozzarella for better melt and texture.
- Allow the pizza to rest before slicing for cleaner cuts.
- Adjust hot honey quantity to control spice level.
