Description

A bold and comforting pizza made with a naturally sweet and tender sweet potato crust, layered with rich tomato sauce, melted mozzarella, savory pepperoni, and finished with a drizzle of hot honey for the perfect sweet and spicy balance.


Ingredients

  • 2 cups mashed sweet potatoes, cooked and well mashed
  • 1 cup almond flour
  • 1 large egg
  • 2 cups shredded mozzarella cheese, divided
  • 1 cup pizza sauce
  • 1 cup sliced pepperoni
  • 2 tablespoons hot honey
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes, optional

Instructions

  1. Preheat oven to 400°F. Line a baking sheet or pizza pan with parchment paper and lightly brush with olive oil.
  2. In a mixing bowl, combine mashed sweet potatoes, almond flour, egg, 1 cup of shredded mozzarella, salt, and black pepper. Mix until fully combined.
  3. Transfer the mixture onto the prepared baking sheet and shape into a round crust about 1/4 inch thick.
  4. Prebake the crust for 15 minutes until lightly firm.
  5. Remove from oven and spread pizza sauce evenly over the crust. Sprinkle the remaining mozzarella cheese on top and arrange sliced pepperoni evenly.
  6. Return to the oven and bake for 12 to 15 minutes, until cheese is melted and bubbly and edges are lightly golden.
  7. Remove from oven and drizzle hot honey evenly over the top. Sprinkle red pepper flakes if desired.
  8. Let rest for 5 minutes before slicing and serving.

  • Drain excess moisture from sweet potatoes to prevent a soft crust.
  • Use freshly shredded mozzarella for better melt and texture.
  • Allow the pizza to rest before slicing for cleaner cuts.
