Description

This pan-seared salmon is served with a rich, creamy mushroom and garlic sauce infused with Parmesan and fresh herbs. The addition of baby spinach makes it a wholesome, one-pan meal packed with omega-3s. Perfect for an easy yet elegant dinner!


Ingredients

For the Salmon:

  • 14 oz salmon fillet, raw
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper

For the Sauce:

 
  • 1 tbsp butter
  • 6 cloves garlic, finely diced
  • 1 small onion, finely diced
  • 10 medium mushrooms, sliced
  • 1/2 cup half & half
  • 1/2 cup fat-free half & half
  • 1/2 cup fat-free plain Greek yogurt
  • 1/3 cup Parmesan cheese, grated
  • 4 cups fresh baby spinach
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp fresh thyme, chopped
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  • Sear the Salmon:

    • Heat olive oil in a large skillet over medium heat.
    • Pat salmon fillets dry and season with salt and pepper.
    • Sear skin-side down for about 7 minutes.
    • Flip and cook the flesh side for another 4 minutes. While the salmon is cooking, use a fork to remove the skin.
    • Flip again to ensure even browning, then remove from pan and set aside.
  • Prepare the Sauce:

    • In the same pan, melt butter over medium heat.
    • Sauté garlic and onion until fragrant and softened.
    • In a separate bowl, mix the half & half, fat-free half & half, and Greek yogurt until smooth.
    • Reduce heat to low and add the cream mixture to the pan.
    • Stir in mushrooms and Parmesan cheese, cooking until the sauce starts to simmer.
    • Add spinach and stir until wilted.

 

  • Finish & Serve:

    • Return salmon fillets to the pan and spoon sauce over them.
    • Sprinkle with fresh parsley and thyme.
    • Serve immediately with your favorite side dish.

Notes

  • Serve with rice, quinoa, or mashed potatoes for a complete meal.
  • Substitute heavy cream for a richer sauce if desired.

 

  • Add red pepper flakes for a bit of spice.
