For the Salmon:
- 14 oz salmon fillet, raw
- 1 tbsp olive oil
- 1/4 tsp salt
- 1/4 tsp black pepper
For the Sauce:
- 1 tbsp butter
- 6 cloves garlic, finely diced
- 1 small onion, finely diced
- 10 medium mushrooms, sliced
- 1/2 cup half & half
- 1/2 cup fat-free half & half
- 1/2 cup fat-free plain Greek yogurt
- 1/3 cup Parmesan cheese, grated
- 4 cups fresh baby spinach
- 1 tbsp fresh parsley, chopped
- 1 tbsp fresh thyme, chopped
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions

Sear the Salmon:
- Heat olive oil in a large skillet over medium heat.
- Pat salmon fillets dry and season with salt and pepper.
- Sear skin-side down for about 7 minutes.
- Flip and cook the flesh side for another 4 minutes. While the salmon is cooking, use a fork to remove the skin.
- Flip again to ensure even browning, then remove from pan and set aside.

Prepare the Sauce:
- In the same pan, melt butter over medium heat.
- Sauté garlic and onion until fragrant and softened.
- In a separate bowl, mix the half & half, fat-free half & half, and Greek yogurt until smooth.
- Reduce heat to low and add the cream mixture to the pan.
- Stir in mushrooms and Parmesan cheese, cooking until the sauce starts to simmer.
- Add spinach and stir until wilted.

Finish & Serve:
- Return salmon fillets to the pan and spoon sauce over them.
- Sprinkle with fresh parsley and thyme.
- Serve immediately with your favorite side dish.
Notes
- Serve with rice, quinoa, or mashed potatoes for a complete meal.
- Substitute heavy cream for a richer sauce if desired.
- Add red pepper flakes for a bit of spice.
