Description

A comforting one-pan meal with warmly spiced chicken and fluffy rice cooked together until rich and aromatic.


Ingredients

  • 1 1/2 cups long grain rice
  • 1 large onion, sliced
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground paprika
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cups chicken broth

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion and cook until soft and lightly golden.
  3. Mix spices together and add with chicken to the skillet, browning lightly.
  4. Stir in garlic and rice until coated.
  5. Add chicken broth, bring to a simmer, cover, and cook until rice is tender.
  6. Rest covered for 5 minutes, fluff, and serve.
