  • 2 tbsp oil from jarred sun-dried tomatoes
  • 1 cup sun-dried tomatoes, drained and chopped
  • 2 tsp minced garlic
  • 2 tbsp all-purpose flour
  • 2 tsp Italian seasoning
  • 1 tsp paprika
  • 2 cups chicken broth
  • 1 (18-oz) package refrigerated cheese tortellini
  • 1 cup heavy cream
  • 2 cups fresh spinach, chopped
  • 1/2 cup grated Parmesan cheese
  • Red pepper flakes (optional, for garnish)
 
  • Salt and pepper to taste (if needed)

Instructions

  • Heat a large skillet over medium-high heat. Add the oil from the sun-dried tomatoes, chopped tomatoes, and garlic. Sauté for 1-2 minutes until fragrant.
  • Stir in the flour, Italian seasoning, and paprika to create a roux.
  • Gradually whisk in the chicken broth and bring the mixture to a boil. Let it simmer for 3-5 minutes until slightly thickened.
  • Add the cheese tortellini and stir to coat in the sauce. Simmer for 3-5 minutes until the tortellini is cooked through.
  • Turn off the heat and stir in the heavy cream, fresh spinach, and Parmesan cheese. Stir gently until the spinach wilts.

 

  • Season with salt and pepper if needed. Garnish with red pepper flakes and serve immediately.

  • Swap chicken broth for vegetable broth for a vegetarian version.
