Description

Fluffy couscous tossed with crisp vegetables, creamy feta, and fresh herbs, all coated in a sweet and slightly spicy hot honey lemon vinaigrette for a bright Mediterranean inspired salad.


Ingredients

  • 1 cup dry couscous
  • 1 cup cherry tomatoes, halved
  • 1 large cucumber, diced
  • 1/4 cup red onion, finely diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons honey
  • 1/2 teaspoon red pepper flakes
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Bring 1 1/4 cups of water to a boil in a medium saucepan.
  2. Stir in the dry couscous, remove from heat, cover, and let steam for 5 minutes.
  3. Fluff the couscous with a fork and allow it to cool slightly.
  4. In a large mixing bowl, combine the couscous, cherry tomatoes, cucumber, red onion, feta cheese, and fresh parsley.
  5. In a small bowl, whisk together lemon juice, lemon zest, honey, red pepper flakes, olive oil, salt, and black pepper until smooth.
  6. Pour the vinaigrette over the salad and toss gently until evenly coated.
  7. Let the salad rest for at least 10 minutes before serving to allow flavors to meld.

Notes

  • Allow the couscous to cool slightly before adding the dressing to prevent wilting the vegetables.
  • Adjust red pepper flakes for desired spice level.
  • Chill for 30 minutes for deeper flavor.
  • Stir gently to keep feta crumbles intact.
