- 1 cup dry couscous
- 1 cup cherry tomatoes, halved
- 1 large cucumber, diced
- 1/4 cup red onion, finely diced
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 2 tablespoons honey
- 1/2 teaspoon red pepper flakes
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Bring 1 1/4 cups of water to a boil in a medium saucepan.
- Stir in the dry couscous, remove from heat, cover, and let steam for 5 minutes.
- Fluff the couscous with a fork and allow it to cool slightly.
- In a large mixing bowl, combine the couscous, cherry tomatoes, cucumber, red onion, feta cheese, and fresh parsley.
- In a small bowl, whisk together lemon juice, lemon zest, honey, red pepper flakes, olive oil, salt, and black pepper until smooth.
- Pour the vinaigrette over the salad and toss gently until evenly coated.
- Let the salad rest for at least 10 minutes before serving to allow flavors to meld.
Notes
- Allow the couscous to cool slightly before adding the dressing to prevent wilting the vegetables.
- Adjust red pepper flakes for desired spice level.
- Chill for 30 minutes for deeper flavor.
