Description

This Easy Frozen Meatball Pot Roast is a budget-friendly slow cooker meal that’s perfect for busy nights! With tender meatballs, savory gravy, and hearty vegetables, this dump-and-go dinner is comfort food at its best. Serve over mashed potatoes for a complete meal.


Ingredients

  • 1 (26oz) bag frozen meatballs
  • 2 cups baby carrots
  • 5 stalks celery, chopped
  • 2 packets brown gravy mix
  • 1 packet Lipton onion soup mix
  • 2 cups water
  • 1/4 cup butter, sliced
 
  • 1 (24oz) container refrigerated mashed potatoes (or homemade)

Instructions

  • Add frozen meatballs, baby carrots, and chopped celery to your slow cooker.
  • In a small bowl, whisk together brown gravy mix with 2 cups of water. Pour over the meatballs and veggies.
  • Sprinkle onion soup mix evenly over the top.
  • Distribute butter slices across the ingredients.
  • Cook on LOW for 3-4 hours, stirring halfway through to ensure even cooking.
  • Prepare mashed potatoes according to package instructions.

 

  • Serve meatballs and gravy over mashed potatoes and enjoy!

  • Want More Flavor? Add black pepper, garlic powder, or Worcestershire sauce.
  • Make It From Scratch: Swap refrigerated mashed potatoes for homemade mashed potatoes.
