Description

This Keto Meat Crust Pizza, also known as Meatza, is a low-carb pizza with a savory ground beef crust, seasoned with spices and topped with melted cheddar cheese. Optional cilantro crema adds a fresh, tangy finish.


Ingredients

  • 1 pound lean ground beef
  • ½ onion, finely minced
  • 1 egg
  • 1 cup cauliflower rice
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 cup shredded cheddar cheese
  • Cilantro Crema (optional):
  • ⅓ cup cilantro leaves, loosely packed
  • ½ cup sour cream
  • 1 tablespoon lime juice
  • 1 clove fresh garlic


Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine ground beef, minced onion, egg, cauliflower rice, chili powder, cumin, salt, black pepper, and garlic powder. Mix until fully incorporated.
  3. Press the meat mixture onto the prepared baking sheet into a circular pizza crust shape, about ½-inch thick.
  4. Bake the crust for 15–20 minutes until the edges are browned and the center is cooked through.
  5. Remove the crust from the oven and sprinkle shredded cheddar cheese evenly over the top.
  6. Return to the oven and bake for an additional 5–7 minutes, until the cheese is melted and bubbly.
  7. Optional: Prepare the cilantro crema by blending cilantro, sour cream, lime juice, and garlic until smooth. Drizzle over the pizza before serving.

Notes

  • You can add other keto-friendly toppings like bell peppers, mushrooms, or cooked bacon.
  • Make sure to squeeze excess moisture from cauliflower rice to avoid a soggy crust.
  • The cilantro crema can be stored in the refrigerator for up to 2 days.
  • Use a pizza stone or cast-iron pan for a crispier crust if desired.
