- 1 1/2 pounds chicken breast, cut into bite sized pieces
- 8 ounces fresh mushrooms, sliced
- 1 medium yellow onion, finely chopped
- 3 garlic cloves, minced
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons olive oil
- 1 tablespoon butter
- 3/4 cup Marsala cooking wine
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Season the chicken pieces with salt and black pepper, tossing to coat evenly.
- Heat olive oil in a large skillet over medium heat until shimmering.
- Add the chicken in a single layer and cook for 4 to 5 minutes, turning occasionally, until golden brown. Remove from skillet and set aside.
- In the same skillet, add butter, chopped onion, and sliced mushrooms. Cook until softened and lightly caramelized.
- Stir in minced garlic and cook for 30 seconds until fragrant.
- Pour in Marsala cooking wine and simmer for 5 to 7 minutes until the sauce reduces slightly.
- Return the chicken to the skillet and cook for another 5 to 7 minutes until fully cooked and coated in sauce.
- Sprinkle with fresh parsley and serve warm.
