Description

Tender bite sized chicken pieces seared until golden, simmered with mushrooms and onions in a rich Marsala sauce that is savory, slightly sweet, and deeply comforting. Perfect for serving over pasta, rice, or mashed potatoes.

  • 1 1/2 pounds chicken breast, cut into bite sized pieces
  • 8 ounces fresh mushrooms, sliced
  • 1 medium yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 3/4 cup Marsala cooking wine
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Season the chicken pieces with salt and black pepper, tossing to coat evenly.
  2. Heat olive oil in a large skillet over medium heat until shimmering.
  3. Add the chicken in a single layer and cook for 4 to 5 minutes, turning occasionally, until golden brown. Remove from skillet and set aside.
  4. In the same skillet, add butter, chopped onion, and sliced mushrooms. Cook until softened and lightly caramelized.
  5. Stir in minced garlic and cook for 30 seconds until fragrant.
  6. Pour in Marsala cooking wine and simmer for 5 to 7 minutes until the sauce reduces slightly.
  7. Return the chicken to the skillet and cook for another 5 to 7 minutes until fully cooked and coated in sauce.
  8. Sprinkle with fresh parsley and serve warm.
