Description

This creamy, cheesy baked dip is inspired by the viral Marry Me Chicken but turned into a gooey, irresistible appetizer. Packed with shredded chicken, sundried tomatoes, and herbs, it’s the ultimate comfort food for entertaining. Serve it hot with pita chips, chili cheese focaccia, or fresh veggies for a guaranteed crowd-pleaser!


Ingredients

  • 2 Cooked chicken breasts, shredded
  • 1/2 cup Sour cream
  • 7 oz (200g) Cream cheese, softened
  • 1 teaspoon Dried thyme
  • 1 teaspoon Chili flakes
  • 1/2 cup Sundried tomatoes, chopped
  • A handful of Fresh thyme leaves
  • 3 Scallions, finely chopped
  • 1 cup Mozzarella cheese, shredded (for topping)
  • 1/2 cup Cheddar cheese, shredded
  • 1/2 cup Parmesan cheese, shredded
  • 1/2 teaspoon Salt
 
  • Black pepper, to taste

Instructions

1. Mix the Dip

  1. Preheat your oven to 360°F (180°C) (fan bake).
  2. In a large mixing bowl, combine: shredded chicken, sour cream, cream cheese, dried thyme, chili flakes, sundried tomatoes, fresh thyme, scallions, cheddar, parmesan, salt, and black pepper.
  3. Stir well until the mixture is smooth and creamy.

2. Assemble the Dip

  1. Taste and adjust seasoning if needed.
  2. Transfer the mixture to a small oven dish, oven-proof pan, or skillet.
  3. Sprinkle the shredded mozzarella evenly on top.

3. Bake and Serve

 

  1. Bake for 20 minutes, or until the dip is golden and bubbling.
  2. For an extra crispy top, place under the broiler (grill) for 1-2 minutes at the end.
  3. Carefully remove from the oven and serve hot with pita chips, focaccia, flatbreads, or fresh veggies.

Notes

  • Make Ahead: You can prepare the dip ahead of time and refrigerate it for up to 24 hours before baking.
  • Serving Ideas: Try pairing with garlic crostini, tortilla chips, or fresh carrot and celery sticks.
