- 2 Cooked chicken breasts, shredded
- 1/2 cup Sour cream
- 7 oz (200g) Cream cheese, softened
- 1 teaspoon Dried thyme
- 1 teaspoon Chili flakes
- 1/2 cup Sundried tomatoes, chopped
- A handful of Fresh thyme leaves
- 3 Scallions, finely chopped
- 1 cup Mozzarella cheese, shredded (for topping)
- 1/2 cup Cheddar cheese, shredded
- 1/2 cup Parmesan cheese, shredded
- 1/2 teaspoon Salt
- Black pepper, to taste
Instructions
1. Mix the Dip
- Preheat your oven to 360°F (180°C) (fan bake).
- In a large mixing bowl, combine: shredded chicken, sour cream, cream cheese, dried thyme, chili flakes, sundried tomatoes, fresh thyme, scallions, cheddar, parmesan, salt, and black pepper.
- Stir well until the mixture is smooth and creamy.
2. Assemble the Dip
- Taste and adjust seasoning if needed.
- Transfer the mixture to a small oven dish, oven-proof pan, or skillet.
- Sprinkle the shredded mozzarella evenly on top.
3. Bake and Serve
- Bake for 20 minutes, or until the dip is golden and bubbling.
- For an extra crispy top, place under the broiler (grill) for 1-2 minutes at the end.
- Carefully remove from the oven and serve hot with pita chips, focaccia, flatbreads, or fresh veggies.
