Description

Juicy cherry tomatoes marinated in olive oil, red wine vinegar, garlic, and fresh parsley. This fresh and vibrant dish is simple to prepare, bursting with flavor, and perfect as a side or topping.


Ingredients

  • 500 grams cherry tomatoes, halved
  • 3 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 2 tablespoons fresh parsley, finely chopped
  • 2 cloves garlic, finely minced
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper, freshly cracked

Instructions

  1. Allow all ingredients to sit at room temperature for about 15 minutes before preparing.
  2. In a large mixing bowl, combine the halved cherry tomatoes, olive oil, red wine vinegar, minced garlic, chopped parsley, salt, and black pepper.
  3. Gently toss the mixture until the tomatoes are evenly coated without crushing them.
  4. Let the tomatoes marinate at room temperature for at least 30 minutes to allow the flavors to develop.
  5. Stir gently before serving and adjust salt or pepper if needed.
  6. Transfer to a shallow serving dish and spoon the juices over the top before serving.

Notes

  • For deeper flavor, marinate up to 2 hours.
