Description

This Chicken Broccoli Alfredo Bake is a creamy, cheesy, low-carb dinner that’s perfect for busy nights! Made with tender chicken, fresh broccoli, homemade Alfredo sauce, and a blend of cheeses, this keto-friendly casserole is both delicious and easy to prepare. A must-try for comfort food lovers!

Chicken:

  • 1 1/2 lbs chicken breasts, cubed
  • Onion powder, garlic powder, salt (to taste)
  • 2 tbsp olive oil

Alfredo Bake:

 

  • 1 lb broccoli, cut into small florets
  • 8 oz Alfredo sauce (see homemade version below)
  • 1 cup cottage cheese, drained
  • Onion powder, garlic powder, salt (to taste)
  • 1 1/2 cups shredded Parmesan cheese
  • 1 1/2 cups shredded mozzarella cheese

Instructions

  • Preheat oven to 350°F.
  • Arrange 24 crackers in a single layer on a baking sheet or 9×13 pan.
  • Layer ham and Swiss cheese on each cracker, then top with another cracker to make mini sandwiches.
  • In a small bowl, melt butter and mix in Dijon mustard, garlic powder, and poppy seeds.
  • Brush the butter mixture over the tops of the cracker sandwiches.
  • Bake uncovered for 12-15 minutes, until cheese melts and crackers are golden brown.

 

  • Let cool for 2-3 minutes, then serve and enjoy!

Notes

  • Preheat oven to 375°F. Lightly grease a 9×13″ baking dish with olive oil.
  • In a food processor, blend cottage cheese until smooth. Mix with Alfredo sauce, garlic powder, onion powder, and salt to taste.
  • Season chicken cubes with onion powder, garlic powder, and salt.
  • Heat olive oil in a large skillet over medium-high heat. Cook chicken until golden brown on the sides. Remove from heat.
  • Layer ingredients in baking dish:
    • First, spread broccoli florets evenly.
    • Next, add cooked chicken on top.
    • Sprinkle Parmesan cheese over the chicken.
    • Pour the Alfredo cottage cheese sauce over the dish.
    • Finish by sprinkling mozzarella cheese evenly on top.
  • Bake uncovered for 35 minutes. Broil for 1-2 minutes at the end for a golden brown finish.

 

  • Let cool for 5 minutes before serving. Enjoy!
