Description

Ingredients

  • 2 lbs lean ground beef, thawed

  • 2/3 cup plain breadcrumbs

  • 2 large eggs

  • 1 tbsp Worcestershire sauce

  • 1/2 cup yellow onion, diced

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp dried parsley

  • 1/2 tsp salt

  • 1/4 tsp ground black pepper

  • 6 cups instant mashed potatoes (prepared using package directions)

  • 2 cups medium cheddar cheese, shredded

  • 1/2 lb bacon, cooked and crumbled

 
  • 2 tbsp fresh parsley or chives, diced (for garnish)


Instructions

  • Preheat & Prepare the Meatloaf:

    • Preheat oven to 400°F.

    • In a large bowl, combine ground beef, breadcrumbs, eggs, Worcestershire sauce, onion, garlic powder, onion powder, parsley, salt, and pepper.

    • Mix well but avoid overmixing.

  • Assemble the Casserole:

    • Press the meat mixture evenly into the bottom of a 9×13-inch baking dish.

    • Spread prepared mashed potatoes over the meatloaf layer.

    • Sprinkle with shredded cheese and crumbled bacon.

 

  • Bake & Serve:

    • Cover with foil and bake for 25 minutes.

    • Remove foil and bake uncovered for an additional 10 minutes until cheese is melted.

    • Let cool slightly, garnish with fresh parsley or chives, then slice and serve.


Notes

  • Shortcut: Use pre-made mashed potatoes for an even quicker meal.

  • Make-Ahead: Assemble the casserole a day in advance and refrigerate until ready to bake.
