Description

Ingredients

  • 2 1/4 cups all purpose flour
  • 1 cup granulated sugar
  • 3/4 cup unsalted butter, softened
  • 2 large eggs
  • 2 medium fresh lemons, zested and juiced
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a separate bowl, cream softened butter and granulated sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition. Stir in lemon zest, 2 tablespoons fresh lemon juice, and vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  6. Scoop tablespoon sized portions of dough onto the prepared baking sheet, spacing evenly.
  7. Bake for 10 to 12 minutes until edges are lightly golden and centers remain soft.
  8. Allow cookies to cool completely on a cooling rack.
  9. In a small bowl, mix powdered sugar with 2 to 3 tablespoons fresh lemon juice until smooth to create the glaze.
  10. Spoon or drizzle glaze over cooled cookies and allow it to set before serving.

Notes

  • Do not overbake to keep the cookies soft and tender.
  • For a thicker glaze, add more powdered sugar gradually.
  • Store in an airtight container at room temperature for up to 4 days.
  • Freeze without glaze for up to 2 months and glaze after thawing.
