- 2 medium fresh lemons, zested and juiced

- 1 1/2 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking powder, and salt.
- In a separate bowl, cream softened butter and granulated sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Stir in lemon zest, 2 tablespoons fresh lemon juice, and vanilla extract.
- Gradually add the dry ingredients to the wet mixture, mixing just until combined.
- Scoop tablespoon sized portions of dough onto the prepared baking sheet, spacing evenly.
- Bake for 10 to 12 minutes until edges are lightly golden and centers remain soft.
- Allow cookies to cool completely on a cooling rack.
- In a small bowl, mix powdered sugar with 2 to 3 tablespoons fresh lemon juice until smooth to create the glaze.
- Spoon or drizzle glaze over cooled cookies and allow it to set before serving.
Notes
- Do not overbake to keep the cookies soft and tender.
- For a thicker glaze, add more powdered sugar gradually.
- Store in an airtight container at room temperature for up to 4 days.
- Freeze without glaze for up to 2 months and glaze after thawing.
