The Leftover Turkey Cranberry Panini is a quick and delicious way to transform leftover turkey into a warm, melty sandwich. The combination of savory turkey, tangy cranberry sauce, melty cheese, and crisp greens on buttery croissant bread creates a perfect balance of flavors.

- 2 slices croissant bread
- 2 tsp Dijon mustard, divided
- 1 slice of cheese
- 2 tbsp cranberry sauce
- 1/2 cup leftover turkey, sliced
- Small handful of greens
- 1 tbsp butter
Instructions
- Spread 1 teaspoon Dijon mustard on each slice of croissant bread.
- Layer one slice with cheese, cranberry sauce, sliced turkey, and greens. Top with the second slice of bread.
- Heat a skillet or panini press over medium heat. Melt butter in the skillet if using a panini press, lightly brush the outside of the sandwich with butter.
- Place the sandwich in the skillet or press. Cook for 3–4 minutes per side, or until the bread is golden brown and the cheese is melted.
- Remove from heat, slice in half, and serve warm.
Notes
- Substitute croissant bread with sourdough, whole wheat, or ciabatta if desired.
- Adjust cranberry sauce to taste for sweetness.
- Optional: Add a few slices of apple for extra crunch and flavor.
- Perfect for using up leftover turkey from a holiday meal.
