Description

This Instant Pot Tomato and Shrimp Orzo is a quick and easy one-pot meal packed with bold flavors. Juicy shrimp, tender orzo, and a rich tomato sauce come together with fragrant herbs and creamy feta for a satisfying, protein-rich dish. Perfect for busy weeknights!

Ingredients

  • 1 tablespoon olive oil

  • 1 medium onion, diced

  • 2 cloves garlic, minced

  • 2 (14.5 oz) cans diced tomatoes (sodium-free, with juices)

  • 1 1/4 cup chicken stock (sodium-free)

  • 3/4 cup orzo

  • 2 tablespoons fresh parsley, chopped

  • 2 tablespoons fresh dill, chopped

  • 1 1/4 pounds medium shrimp (peeled and deveined)

  • 1/4 teaspoon salt (plus more to taste)

  • 1/4 teaspoon freshly ground black pepper (plus more to taste)

  • 2/3 cup feta cheese (crumbled or cubed)

Instructions

  • Sauté the Aromatics

    • Set the Instant Pot to Sauté mode and preheat before adding oil.

    • Add olive oil, onion, and garlic. Cook, stirring, until softened and translucent (about 3 minutes).

    • Deglaze the pot with a splash of water or chicken stock to prevent sticking.

  • Add the Base Ingredients

    • Stir in diced tomatoes and chicken stock. Bring to a boil, making sure nothing is stuck to the bottom.

  • Cook the Orzo and Shrimp

    • Add orzo, parsley, and dill. Stir well.

    • Place shrimp on top and season with salt and pepper.

    • Sprinkle feta cheese over the top.

  • Pressure Cook

    • Set Instant Pot to Manual High Pressure for 3 minutes.

    • Once done, use Quick Pressure Release to prevent overcooking.

  • Serve and Enjoy

    • Stir gently before serving, and adjust seasoning if needed.

Notes

  • Use low-sodium ingredients for better flavor control.

  • Substitute vegetable broth for a vegetarian version.

  • For extra creaminess, stir in a bit of heavy cream or Greek yogurt before serving.
