- 1/2 cup unsalted butter
- 1 tablespoon granulated sugar (for dough)
- 1/2 cup granulated sugar (for coating)
- 1/2 teaspoon salt
- 1 cup all purpose flour
- 2 large eggs
- About 3 cups vegetable oil (for frying)
- 6 ounces dark chocolate
- 1/2 cup heavy cream
- 1/4 cup Guinness stout
Instructions
- Heat vegetable oil in a deep pot to 350°F and line a plate with paper towels.
- In a saucepan, bring water, butter, 1 tablespoon sugar, and salt to a simmer over medium heat.
- Stir in flour until a thick dough forms and pulls away from the sides of the pan.
- Remove from heat and let the dough cool slightly, then beat in eggs one at a time until smooth and glossy.
- Transfer dough to a piping bag fitted with a star tip and pipe 4 to 5 inch strips directly into the hot oil.
- Fry for 2 to 3 minutes per side until golden brown and crisp, then remove with a slotted spoon and drain on paper towels.
- Roll warm churros in the remaining 1/2 cup granulated sugar until evenly coated.
- For the sauce, heat heavy cream until just simmering, pour over chopped dark chocolate, and stir until smooth.
- Mix in Guinness stout until fully combined and silky.
- Serve churros warm with the chocolate Guinness dipping sauce.

- Maintain steady oil temperature for evenly cooked churros.
- Do not overcrowd the pot while frying.
- If the sauce thickens too much, stir in a splash of warm cream.
