- 2 to 3 pounds raw chicken bones, preferably with some meat attached
- 2 large carrots, chopped
- 2 celery stalks, chopped
- 1 large onion, quartered
- 4 cloves garlic, smashed
- 1 tablespoon apple cider vinegar
- 1 teaspoon salt
- 1 teaspoon whole black peppercorns
- 1 small handful fresh parsley
- 10 to 12 cups water, enough to fully cover ingredients
Instructions
- Place chicken bones, carrots, celery, onion, garlic, apple cider vinegar, salt, black peppercorns, and parsley into the slow cooker.
- Pour in enough water to fully cover all ingredients.
- Cover with the lid and set the slow cooker to low heat.
- Cook for 18 to 24 hours, allowing flavors to fully develop.
- Carefully strain the broth through a fine mesh strainer into a large bowl, discarding solids.
- Let the broth cool completely before transferring to storage containers.
- Use immediately or refrigerate or freeze for later use.
Notes
- Cook on low heat to keep the broth clear and avoid cloudiness.
- Add salt lightly at first and adjust after straining if needed.
- For deeper flavor, roast the bones before placing them in the slow cooker.
