- 4 hoagie rolls
- 4 large fresh ripe tomatoes, halved
- 1 large red bell pepper, sliced
- 1 large yellow onion, sliced
- 3 whole garlic cloves
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the grill to medium heat, about 375 degrees Fahrenheit.
- In a large bowl, toss the halved tomatoes, sliced red bell pepper, sliced onion, and whole garlic cloves with olive oil, salt, black pepper, and dried oregano until evenly coated.
- Lightly oil the grill grates to prevent sticking.
- Place the sausages on one side of the grill and the seasoned vegetables and tomatoes on the other side, using a grill basket if needed.
- Grill the sausages for 12 to 15 minutes, turning occasionally, until fully cooked and the internal temperature reaches 160 degrees Fahrenheit. Grill the vegetables and tomatoes for about 10 minutes until softened and lightly charred.
- Transfer the grilled tomatoes and garlic to a blender or food processor and blend into a thick sauce, keeping some texture if desired.
- Slice the sausages lengthwise if preferred and lightly toast the hoagie rolls on the grill.
- Place one sausage in each roll, top with grilled peppers and onions, spoon over the grilled tomato sauce, and serve hot.
