Description

  • 3 pounds red or yellow potatoes, cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 3โ€“4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup Parmesan cheese
  • Chopped fresh parsley for garnish

Instructions

  1. Preheat your grill to medium heat and grease a grilling basket or a piece of aluminum foil with non-stick spray.
  2. In a large bowl, toss the potato pieces with olive oil, garlic, Italian seasoning, salt, and pepper until evenly coated.
  3. Transfer the seasoned potatoes to the grilling basket or foil. Spread them out in a single layer for even grilling.
  4. Grill the potatoes for 20-25 minutes, stirring occasionally, until they are golden brown and crispy on the outside, and tender on the inside.
  5. Once the potatoes are done, remove them from the grill and sprinkle with Parmesan cheese while still hot.

  • If you donโ€™t have a grilling basket, you can use a large piece of foil, folding the edges up to create a pouch.
