Description

A soft and buttery glazed lemon loaf bursting with fresh citrus flavor and topped with a smooth sweet lemon glaze. Perfect for breakfast, brunch, or an afternoon treat.


Ingredients

  • 1 1/2 cups all purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 2 medium fresh lemons, zested and juiced
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup powdered sugar

Instructions

  1. Preheat oven to 350 degrees Fahrenheit and grease a 9 by 5 inch loaf pan.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a separate bowl, cream softened butter and granulated sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Mix in milk, lemon zest, lemon juice from the 2 lemons, and vanilla extract.
  6. Gradually fold the dry ingredients into the wet mixture until just combined.
  7. Pour the batter into the prepared loaf pan and smooth the top evenly.
  8. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the loaf to cool completely on a wire rack.
  10. In a small bowl, mix powdered sugar with 2 to 3 tablespoons of the fresh lemon juice until smooth, then pour evenly over the cooled loaf. Let glaze set before slicing.

  • Do not overmix the batter to keep the loaf tender.
  • Zest the lemons before juicing for easier preparation.
  • Allow the loaf to cool fully before glazing to prevent melting.
