- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup milk
- 2 medium fresh lemons, zested and juiced
- 1 teaspoon vanilla extract
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup powdered sugar
Instructions
- Preheat oven to 350 degrees Fahrenheit and grease a 9 by 5 inch loaf pan.
- In a bowl, whisk together flour, baking powder, and salt.
- In a separate bowl, cream softened butter and granulated sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- Mix in milk, lemon zest, lemon juice from the 2 lemons, and vanilla extract.
- Gradually fold the dry ingredients into the wet mixture until just combined.
- Pour the batter into the prepared loaf pan and smooth the top evenly.
- Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the loaf to cool completely on a wire rack.
- In a small bowl, mix powdered sugar with 2 to 3 tablespoons of the fresh lemon juice until smooth, then pour evenly over the cooled loaf. Let glaze set before slicing.
