Ingredients

  • For the Stir-Fry:

    • 1 chicken breast, cut into bite-sized pieces

    • 1 tbsp olive oil

    • 1/2 tsp garlic powder (or 1 clove garlic, minced)

    • 1/2 tsp black pepper

    • 1/2 tsp salt

    • 1/2 tbsp soy sauce

  • For the Vegetables:

    • 1/2 cup broccoli florets

    • 1/2 cup carrots, sliced

    • 1/4 cup red onion, chopped

    • 1 tbsp soy sauce

    • 1/2 tbsp olive oil

    • 1/4 tsp black pepper

 
  • For the Rice:

    • 1 cup cooked white or brown rice


Instructions

  • Cook the Chicken:

    • Heat olive oil in a pan over medium-high heat.

    • Add the chicken pieces and season with garlic powder, salt, and black pepper.

    • Cook for 5-7 minutes until golden brown.

    • Drizzle soy sauce over the chicken and stir for another minute.

  • Sauté the Vegetables:

    • In the same pan, add a bit more olive oil and sauté the carrots for 3 minutes.

    • Add broccoli and red onion, stirring occasionally for another 3-4 minutes.

    • Pour in soy sauce and black pepper, mixing well.

 

  • Assemble the Plate:
