Ingredients

  • 1 lb (450g) ground chicken
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 green onions, sliced (for garnish)
  • 1 teaspoon sesame seeds (for garnish)
Firecracker Sauce:
  • 1/4 cup hot sauce (such as Frank’s RedHot)
  • 2 tablespoons honey
  • 1 tablespoon soy sauce (low sodium)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sriracha (adjust to taste)
  • 1/2 teaspoon red pepper flakes (optional for extra spice)
  • 1 teaspoon cornstarch (mixed with 1 tablespoon water)

Instructions

  • Heat olive oil in a large skillet over medium heat. Add ground chicken, salt, and pepper, and cook until browned, breaking it apart with a spatula. Drain excess liquid if needed.
  • Add garlic and ginger, and sauté for 1 minute until fragrant.
  • In a small bowl, whisk together hot sauce, honey, soy sauce, rice vinegar, sriracha, and red pepper flakes.
  • Pour the sauce over the chicken, stirring well to coat. Let it simmer for 2–3 minutes.
  • Stir in the cornstarch slurry and cook for another 1–2 minutes until the sauce thickens.
  • Remove from heat, garnish with green onions and sesame seeds, and serve over rice or lettuce wraps.

Notes

  • Adjust the spice level by adding more or less sriracha and red pepper flakes.
  • Swap ground chicken for ground turkey or lean beef.
